If you’ve been following my baking journey, you already know that sourdough has a special place in my life. There’s just something magical about that bubbly starter — it’s alive, patient, and always ready to surprise me. Lately, I’ve been looking for ways to bring my sourdough starter into my sweet treats, and this week’s adventure turned into something truly special: Oatmeal Sourdough Cookies.
They’re soft and chewy in the middle, crispy at the edges, and filled with that comforting oat flavor that just tastes like home. Every bite feels like a little hug from Heaven.

Rebecca’s Oatmeal Sourdough Cookies
Ingredients
First mix: The cozy beginnings
- ½ cup (113g) unsalted butter, softened
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 large egg
- ½ cup active sourdough starter (fed or discard)
- 1 tsp vanilla extract
Second mix: The hearty goodness
- 1 cup all-purpose flour
- ½ tsp baking soda
- ½ tsp cinnamon (optional, but highly recommended!)
- ¼ tsp salt
Last but not least: The soul of the cookie
- 1½ cups old-fashioned oats
- ½ cup raisins or chocolate chips (whichever your heart desires)

How to Make Them
Cool & praise
Let the cookies rest on the pan for a few minutes before moving them to a rack. Take a moment to enjoy that warm, homey scent — and maybe whisper a little “thank You” for the simple joys.
Preheat & Pray (just a little!)
Set your oven to 350°F (175°C). Take a deep breath and thank God for another day of creation and sweetness.
Cream the butter & sugars
In a large bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy — about 2–3 minutes.
Add the eggs & starter
Mix in the egg, sourdough starter, and vanilla until smooth and silky. It’s okay if the batter looks a bit tangy — that’s the sourdough’s charm.
Whisk the dry ingredients
In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Slowly mix this into your wet ingredients until just combined.
Fold in the oats & extras
Stir in your oats and raisins (or chocolate chips) until everything feels evenly loved and cozy.
Scoop & bake
Drop spoonfuls of dough onto a parchment-lined baking sheet. Bake for 10–12 minutes, or until the edges turn golden and the centers still look a little soft.
